We started Casbah in Santa Cruz in January, 2000 as a catering company
that provided health-oriented food to businesses and private parties.
Shortly after, we were involved as a vendor for various festivals in the
Santa Cruz and San Jose areas and quickly became one of the people's favorite
vendors.
Casbah
Exotic was founded on the idea that vegetarian and lean non-vegetarian
foods fit
well in today's health-conscious (and environmentally conscious) lifestyle
and ethos. Our food is nutritious, natural, and appeal to all the senses;
taste, smell, and sight.
The
vegetables in our food are mostly organically grown, low in fat and cholesterol.
We combine these with unique spices and fresh in house preparation to
produce a very tasty and exotic Mediterranean flavor.
